Until recently, I was woefully ignorant of Shakshuka!

This amazingly delicious dish is a Middle Eastern delight, and is a traditional Israeli breakfast.  However, it can be eaten at any meal!

I made this for our Christmas breakfast this year, and based on the rave reviews, I think it's going to be in rotation quite a bit now!

Traditionally Shakshuka doesn't have meat, but I decided to add some sausages to the dish, and it really worked well.

Christmas traditions and how they change

In conversation with a friend about family traditions, we talked about how Christmas morning breakfast is one of those for my family, and yours too, I'm sure. 

Recent years have seen my son making French Toast for the spread.  (it's great having a professional chef in the family!)
 
This year I decided to try something new for our Christmas breakfast.
 
Not long ago, an acquaintance told me how she had made this dish for her mother for her birthday because it was her mothers' favourite breakfast.  It sounded so delicious (and easy to make) that I wanted to make it for our Christmas breakfast this morning.

CHRISTMAS MORNING SHAKSHUKA
 
Shakshuka
 
 
INGREDIENTS
  • 3 tablespoons grapeseed or extra-virgin olive oil
  • 4 sausages – beef, pork, turkey or veggie
  • 1 large onion, diced
  • 3 garlic cloves, thinly sliced or minced (your preference)
  • 1 tbsp ground cumin
  • 1 teaspoon sweet paprika
  • ⅛ teaspoon cayenne, or to taste
  • 2 tsp hot sauce, or to taste
  • 1 (28-ounce) can diced tomatoes
  • ¾ teaspoon salt, or to taste
  • ¼ teaspoon black pepper, or to taste
  • ½ cup  feta cheese, crumbled
  • 6 large eggs
DIRECTIONS
  1. Heat oven to 375 degrees Farenheit
  2. In large skillet, heat oil and cook sausages.  Remove from pan and slice
  3. In same skillet, add diced onions and cook until tender (approximately 15 minutes)
  4. Add garlic and cook another 1 – 2 minutes
  5. Add cumin, sweet paprika, cayenne and hot sauce and cook for another minute.
  6. Return sausages back to mixture in pan.
  7. Pour in tomatoes, and season with pinch of salt and two turns of pepper mill.
  8. Simmer until tomatoes have thickened, approximately 10 minutes.
  9. Add crumbled feta and stir in.
  10. Gently crack 6 eggs over the tomato mixture.
  11. Season eggs with salt and pepper
  12. Place skillet into preheated oven and bake until whites are cooked and egg yolks are set
  13. Serve with a sprinkle of your favourite hot sauce!
  14. Serve and enjoy!
