cashewnutcheezeMakes 1 litre

  • 3 cups raw cashews, soaked for at least an hour
  • 2 cups water
  • 1 tablespoon nutritional yeast
  • 1/8 small red onion
  • juice from 1/2 lemon
  • 1 teaspoon Himalayan Salt (you can use any kind of sea salt, but avoid regular table salt – it will be nasty)

Blend all until smooth, and store in glass mason jars.   Remember to leave some room for expansion!

Use on crackers, burgers, wraps, etc.
